Description from Brewery: Modern Sparkling Cider is our first step into non–barley-based alcoholic drinks, and a deliberate exploration of how our approach to brewing translates into cider.
Fermented with a light wine yeast, chosen specifically to lift fruity esters and keep the profile bright and expressive rather than rustic, funky or phenolic. A light dry hop with Nelson Sauvin was added, not to make this “hop-forward”, but to subtly reinforce fresh fruit aromatics.
Rather than attempting a traditional or heritage-style cider, the aim was to create something that feels like Cloudwater: clean, modern and designed to drink well in a bar or taproom environment, with a dry to medium apple cider base to provide enough structure and body without pushing into sweetness.
